Wolf Fine Foods provides hands-on training at our training center or at the Client’s operation. In order to establish a clear and precise learning outcome, Wolf Fine Foods is establishing focus points with the Business Owner or Manager by:

  • Developing a detailed training plan (what, when, and how) focusing on agreed learning outcomes
  • Supporting training material including SOP’s will be provided to client and team
  • Wolf Fine Foods on – site visits focus on menu and recipe improvements, service sequence and a 3 – day operational review (not critique!)

Our Expertise

Kitchen:

  • Basic Cooking Techniques (braising, roasting, poaching, frying, sauteing)
  • Focus point on appetizers, salads, soups, main courses and desserts (hands on production with picture taking)
  • Procurement – development of menus, recipes, order guide and production sheets
  • Food Safety and Hygiene – documentation according to cleaning schedule, check lists and audits
  • Scheduling – understanding labor hours and management
  • Food Cost Control – cost management tools and control strategies

Dining Room:

  • Basic Serving Techniques (taking orders, order pick up, serving, clearing, cleaning, set up)

  • Beverage serving techniques (basic wine, beer and cocktail service)
